Apricot energy balls

Ingridients:

- 250g dried apricots 

- 200g oats 

- 60g almonds, unsalted 

- 2-3 tbsp agave syrup

- ½ tsp almond extract 

- 2 tsp chia seeds

- 2 tsp Ceylon cinnamon

Method

  1. Soak the apricots for 10-15 minutes. Chop the almonds (or blend them) and transfer to a bowl.
  2. Blend the apricots into a paste and transfer to the bowl too.
  3. Add the remaining ingredients and mix well by hands until you have a smooth dough.
  4. Shape the dough into balls. Enjoy!
