Method
- Heat a large pan over high heat until hot.
- Add 1 tbsp of butter, break the ground beef into chunks, and sauté for 3–4 minutes. Once browned, transfer the beef to a bowl.
- Roughly chop the onion, carrot, celery, and garlic.
- In the same pan, add the remaining butter along with the chopped vegetables. Sauté, stirring occasionally.
- Add the cinnamon stick, bay leaf, a pinch of sugar, salt, and continue to sauté for another 1–2 minutes.
- Return the beef to the pan, then add the tomato paste, chopped tomatoes, and water. Lower the heat and let it simmer gently for about 30 minutes.
- Meanwhile, bring a pot of salted water to a boil and cook the oat linguine according to the package instructions.
- Once cooked, drain the pasta and toss it with a little olive oil.
- Serve topped with the rich beef ragu, grated Parmesan, freshly ground black pepper, and oregano leaves.
