Method
For the fava:
• We soak the fava beans in warm water for 2 hours and then drain them.
• We add the fava beans in 1.5L water and boil them for about 1 hour.
• We make sure to remove the foam constantly.
• Before it’s done, we add the salt and the garlic powder, and we stir.
• As soon as the water has been absorbed, we use a hand or regular blender until the fava has become creamy.
For the caramelized onions:
• We peel and finely chop the onions and the garlic cloves.
• We add the olive oil to a pan.
• As soon as it warms up, we add the onions and the garlic cloves to shallow-fry for 3-4 minutes.
• When their color becomes lighter, we lower the eye intensity below medium and add the apple cider with the molasses and stir.
• We close the lid and let them get caramelized for about 15 minutes in low heat.
• We serve the Greek fava adding the caramelized onions, the capers, the fresh thyme, and some extra olive oil (optional).
