The yolk, the gold of the Greek land as it is called, is one of the most beloved and valuable spices of ancient civilizations, for its aroma, color, medicinal and aphrodisiac properties. The locals plant the saffron every summer and when autumn arrives, they remove by hand the precious spots of the beautiful flower and dry them carefully to make the deep red thin threads. It takes about 50,000 spots to produce 100g of red yolk. The saffron or Greek saffron, as it is commonly called, belongs to the best saffron variety in the world. Try it as a beverage by adding it to water or milk, or in your cooking, where its addition enhances the taste and aesthetics of your dish. Krokos Kozani, as a spice, adds to the food its delicate aroma, the spicy taste and its beautiful yellow color. It is especially suitable for rice, pasta, sauces, chicken, fish soups, lamb, potatoes, legumes, buns & cakes, ice cream. The philosophy of using yolk is similar to that of an expensive aroma: It is used in the amount mentioned each time in the recipe, because otherwise the taste of the food is altered. Powdered yolk is added to food dissolved in water. The spots are soaked in a cup of water 1 hour before cooking and added to food, either with water or just after straining.
