Legume salad with organic tuna and vegetables by BioAgros!

Ingridients:

- 500 g organic beans BioAgros

- 1 onion, sliced

- 1 red pepper, in pieces

- 1 carrot, diced

- 3 sun-dried tomatoes Fine Cuisine, in pieces

- 2 tbsp. organic Capers Fine Cuisine

- 150 ml organic olive oil BioAgros

- 40 ml juice of fresh lemons

- 1 can of organic tuna Pan do Mar

- Parsley

- Fresh thyme

- Salt Pepper

Method

We soak the beans from the previous night and drain them the next day. Boil them according to the packaging instructions (45 - 50 minutes), until they get soft. Then, drain them and leave them aside.

In a bowl we mix the olive oil with the lemon, thyme, salt and pepper.

In a large bowl we add the beans, onion, pepper, carrot, capers, sun-dried tomatoes and tuna. Then pour the sauce into the salad and mix it.

Serve it cold on a plate with fresh parsley.
