Method
We soak the beans from the previous night and drain them the next day. Boil them according to the packaging instructions (45 - 50 minutes), until they get soft. Then, drain them and leave them aside.
In a bowl we mix the olive oil with the lemon, thyme, salt and pepper.
In a large bowl we add the beans, onion, pepper, carrot, capers, sun-dried tomatoes and tuna. Then pour the sauce into the salad and mix it.
Serve it cold on a plate with fresh parsley.
