Whole wheat spaghetti with minced soy and nutritional yeast

Ingridients:

500 gr. whole grain spaghetti
200 gr. soy mince
1 onion
2 cloves of garlic
1 leek
3 tbsp tomato paste
Olive oil
60 gr. red wine
1 liter of water
200 gr. chopped tomatoes
1 bay leaf
1 cinnamon stick
Pepper & Salt
50 gr. parsley
Nutritional yeast

Method

For the vegetable substitute for mince:

  • Prepare the soy mince according to the instructions on the package.
  • Finely chop the onion, garlic and leek.
  • Put a saucepan on medium heat.
  • Pour into the pot 2 tbsp. olive oil, onion, garlic, leek and sauté for 2-3 minutes, until caramelized.
  • Add the soy mince and the tomato paste and sauté for another 1-2 minutes.
  • Extinguish with red wine and wait until the alcohol has completely evaporated.
  • Add the water, the chopped tomatoes, the bay leaf and the spices, mix with a spoon and leave for 30 minutes, on a low heat, until the soy mince softens and the sauce thickens.
  • Remove the pot from the heat and add the chopped parsley and mix with the spoon.

For the spaghetti:

  • Place the spaghetti in a large pot of boiling salted water and cook according to package directions.
  • As soon as they are ready, strain them.
  • Serve the spaghetti on a plate and with a spoon pour 3 spoons of minced meat on top and one tablespoon of nutritional yeast.
