Method
For the vegetable substitute for mince:
- Prepare the soy mince according to the instructions on the package.
- Finely chop the onion, garlic and leek.
- Put a saucepan on medium heat.
- Pour into the pot 2 tbsp. olive oil, onion, garlic, leek and sauté for 2-3 minutes, until caramelized.
- Add the soy mince and the tomato paste and sauté for another 1-2 minutes.
- Extinguish with red wine and wait until the alcohol has completely evaporated.
- Add the water, the chopped tomatoes, the bay leaf and the spices, mix with a spoon and leave for 30 minutes, on a low heat, until the soy mince softens and the sauce thickens.
- Remove the pot from the heat and add the chopped parsley and mix with the spoon.
For the spaghetti:
- Place the spaghetti in a large pot of boiling salted water and cook according to package directions.
- As soon as they are ready, strain them.
- Serve the spaghetti on a plate and with a spoon pour 3 spoons of minced meat on top and one tablespoon of nutritional yeast.
