Pancakes with grilled bacon and maple syrup

Ingridients:

For the dough:
2 medium eggs
300 gr. flour p.o.c
2 kg. baking powder
1 tsp baking soda
30 gr. granulated sugar
280 ml milk, whole
50 gr. butter, melted
A little butter for baking

For serving:
10 slices of bacon
Evergreen Bio Maple Syrup

Method

  • In a large bowl, pour the flour, soda, baking powder, milk and sugar.
  • Then pour the melted butter into the bowl and mix very well with a hand whisk until a smooth mixture is created.
  • Finally, add the eggs and continue mixing until they are completely homogenized with the rest of the dough mixture.
  • Heat a pan over medium-high heat and brush the surface of the pan with a little butter.
  • Take 1 full spoonful of the dough, pour it into the center of the pan and let it slowly spread out.
  • Bake the pancake on one side and when small bubbles form on the top, turn it on the other side with the help of a spatula.
  • Once it is ready, transfer it to a plate. Repeat the same process with the entire dough mixture.
  • In another pan, cook the bacon.
  • Layer the pancakes with two slices of bacon on each layer. Drizzle with the maple syrup.
